This sweet and savory Christmas pudding is served in Armenia during the holidays.

8 to 10 servings


1 cup husked wheat berries 
3 quarts water
1½ cups dried apricots, cut into quarters
1½ cups golden raisins
2 cups sugar
2 tablespoons rose water

Recipe preparation

Rinse the wheat berries well. Place in a 5-quart saucepan with 3 quarts water. Bring to a boil; remove from heat. Let stand, covered, for 8 to 10 hours. Simmer over low heat for 1½ hours. Rinse the apricots and raisins and add to the wheat mixture. Add the sugar. Simmer for 30 minutes; remove from heat. Stir in the rose water. Spoon into a deep serving dish and garnish with walnuts and blanched almonds. Chill and serve cold.
